Diabetic Holiday Eating
The holidays are upon us and everyone wants to grab a slice of Grandma’s Homemade Pumpkin Pie. Unfortunately, if you have diabetes you have to be careful about what you have, and how much of it you eat. We’ve skimmed some recipes for you [courtesy of Diabetic Living Online] to help make the Holiday Feasts more diabetic-friendly!
Lattice-Topped Apple Pie
6 Cups of Sliced Apples
3 tbs sugar
1 tsp ground cinnamon
1 tbs cornstarch
A whole wheat pastry (store bought is fine!)
1. In a 2-quart rectangular baking dish, arrange apples; set aside. In a small bowl, combine sugar and cinnamon; set aside 1 teaspoon of the mixture. Stir cornstarch into remaining sugar mixture. Sprinkle cornstarch mixture onto apples; toss to combine.
2. Preheat oven to 375 degrees F. On a lightly floured surface, flatten Whole Wheat Pastry dough. Roll dough from center to edges into a 10×5-inch rectangle. Cut pastry lengthwise into nine 1/2-inch-wide strips. Carefully place 4 pastry strips lengthwise over apples, place remaining 5 pastry strips crosswise over the apples, spacing strips evenly to form a lattice-style crust. Trim pastry strips; tuck ends into dish. Brush pastry with milk, sprinkle with reserved sugar mixture.
3. Bake for 40 to 45 minutes or until apples are tender, covering with foil, if necessary, to prevent overbrowning. Serve warm or cool. Makes 8 (2/3-cup) servings.
Wild Rice Stuffing
¼ Cup Wild Rice
1 ¾ Cups Water
¼ Brown Rice
1 tsp instant chicken bouillon granules
1/8 – ¼ tsp ground sage or nutmeg
2 Cups sliced fresh mushrooms
½ Cup chopped Celery (about 1 stalk)
1/3 Cup Sliced Green Onions (about 3)
½ Cup Sliced Almonds
1. Rinse uncooked wild rice in a strainer under cold water about 1 minute; drain. In a medium saucepan combine wild rice, the 1-3/4 cups water, uncooked brown rice, bouillon granules, and sage. Bring to boil; reduce heat. Simmer, covered, for 20 minutes.
2. Add mushrooms, celery, and green onion. Cook, covered, over medium-low heat about 25 minutes more or until vegetables are just tender, stirring frequently. If desired, stir in almonds. Serve immediately, or cool and use to stuff a 3-1/2- to 4-pound broiler-fryer chicken (see stuffing tips). Makes 6 servings.
